Garden beets, the common red root most of us know and love, can be cooked or left cold for salads. Beets are a popular vegetable for pickling. Of course, in Eastern European countires, beets are used in borsch, a cold beet soup,which is incredibly popular.

The beet has been cultivated since ancient times. It has been documented in Babylonia in during the 8th century BC and as far east as China by 840 AD. By the 19th Century, beets became commercially important, specifically the sugar beet, as an alternative to tropical sugar cane as a source of sucrose.

Beets are not only high in antioxidants, but contain a very unusual mix of antioxidants including, beta-carotene, lutein, zeaxanthin, vitamin C, and manganese. Beets have incredible anti-inflammatory properties and are an important vegetable to include in a detoxification program due to their betalin pigments.
